So early in January, I was so excited to find a recipe for sweet potato shepherd's pie. Sweet potato is, in my opinion, delicious, and so are shepherd's pies. The combination, I reasoned, would be amazing. I have to say, however, that the result was a bit disapointing...rather bland actually. Don't get me wrong, the sweet potato topping was great, but the filling? It could have used a bit of work. Unless someone comments asking for the recipe, I'll include it only if I decide to make the pie again...and it turns out better.
We served the pie along with a fresh dandelion green salad!
