Vegan Crustless Quiche

I found this recipe on the blog Fat Free Vegan Kitchen. Now, I'm not vegan, nor do I really worry about food being fat free (I'm of the opinion that some fat is good for you!). But they do have great pictures on the site, and I enjoy reading the blog for inspiration. I was particularly taken with this recipe because...

1. The picture on Fat Free Vegan Kitchen looked totally delicious and

2. I love quiche, and the thought of miniature quiches that I could make in muffin tins was so appealing that I just had to try it.


The end result was, I must say, while decent, not all that great. I probably won’t make this recipe again unless I'm told I must make quiche for a vegan. However, the idea of quiche in a muffin tin? Genius! And a great way to make quiches for my gluten intolerant mother! Though I think next time I’ll try it with the sundried tomato pesto quiche filling I’ve used before instead.
