Gluten free pizza!

In April, I got quite sick. Then, almost immediately after I began feeling better, I managed to give myself 3rd degree burns making oatmeal on my stove top one morning. I also spent a large portion of April craving pizza. In an effort to satisate my seeming unsatisable desire for pizza, I went to Natural Grocers, my new favorite grocery store (a bit on the smaller side, but they carry just about everything that I normally get, and they're cheaper than Whole Foods!), and picked up a package of "free" pizza crusts. They are so named because they are free of gluten, as well as 6 other common allergies. Not yeast free, however, which was a disappointment because I have family allergic to both gluten and yeast.

The crusts are definitely different. They are made partially out of tapioca flour, which, in my experience, has a rather bland taste. But I find their final flavor to be quite tasty. They are also very filling, and surprisingly low calorie!

I made several different kinds of pizza. My favorite may be the breakfast pizzas I made with eggs on top. This one was a veggie pizza I made. I used sliced tomatoes instead of regular pizza sauce, mushrooms, green onions, and a bit of tomato paste. Simple, but delicious!
