Green Tea Mousse Cheesecake

It was decided that I would make a cheesecake. But what kind? Cheesecake is simply too good! Finally, we decided that green tea was a winner. I, and the person I was making the cake for, both love green tea flavored deserts, so it sounded challenging, but perfect.

First, I had to find the matcha powder. I knew, in the worst case senario that there was an asian market...somewhere...a bit of a drive away where I was sure I could get some. But I was hoping to not have to make the drive. Instead I went to my local whole foods, where I found some sweetened matcha powder. The original recipe calls for unsweetened matcha, but I figured that I could just reduce the amount of sugar added to the recipe and it would work out.



I had a rather dramatic time preparing the cheesecake, but this was mostly due to my incorrect kitchen tools. Whisking one and a half cups of heavy cream 'till it's stiff with nothing more than a hand whisk can lead to vast issues of frustration. Especially when you whisk it for at least 20 minutes and then proceed to spill it all over your kitchen. But in the end (armed with a fresh container of cream and a friend's electric blender) it was finished, and it was delicious!
