Dinner Party Vegetables

After finishing the first run of performances, my friends and I were all feeling a bit stretched thin, and I was (and still am) having a bit of a hard time getting my bearings in this strange new land of Texas. But we realized we had made it about a quarter of the way through our performance season, and to celebrate the milestone me and a few friends threw ourselves a fabulous dinner party!

Roasted vegetables (my contribution)
Fried Rice
Tamale Pie

And for desert:
Brownies
Blackstrap Molasses Cookies (my other contribution)


I didn't follow a recipe for my vegetables, (which turned out quite delicious) but there was a general idea behind the whole thing... :).
Preheat oven to 450 degrees fahrenheit Chop veggies. I used cauliflower, bell pepper, and zucchini; other good ones to use include brussels sprouts, carrots, and yams. and combine together in a large bowl. Add olive oil, at least two teaspoons to the bowl of vegetables. Mix veggies so they are coated with oil. Add spices (I believe I used salt, pepper, and garlic powder). Lay vegetables in a single layer on a baking sheet and bake for 20 min, turning 2-3 times. Raise temperature to 500 degrees fahrenheit and cook several more minutes, until tender. Add about 2 teaspoons of lemon juice and serve hot!
