We have been having the oddest weather here in TX. It's cold! Snowing, and icing. No one here is prepared for the snow, so the roads are never cleared. Thus, even the slightest amount of snow coverage causes mass alarm among the natives; stores are closed, people hold onto fence posts while walking...Coming here from Colorado, I must admit I find all the hullabaloo rather amusing...
We have now had a grand total of 5 snow days within the past two weeks. So what is one to do when in Texas with even the Walmart closing early? Cook of course! Wednesday morning I made, along with two fabulous people, my regular cooking buddy J and her beau, some delicious gingerbread pancakes!
Ahem...in the sake of honesty I should mention one hiccup I had in the making of these pancakes. In a state of absentmindedness I accidentally substituted 1/2 t garlic powder for the 1/2 t ginger powder. And also garnished the pancakes with more garlic powder. Oops. Amazingly, they were still quite good. I was a bit mortified, but luckily my friends have a good since of humor!
